Amaranth Coconut Bircher

Strange times. None of us thought we will be living a situation like this now is a reality. As scary and daunting as the next few weeks appear thinking that something as simple as staying home- with our loved ones- can change the outlook for our whole planet make it that bit more bearable.

Stay strong and healthy. Stay home.


I'll be posting recipes and ideas for you but also if you would like to see a post on a particular recipe, message me and I'll do my best to make it happen.


Serves 4


1 cup rolled oats

1/2 cup popped amaranth

1/4 cup shredded coconut

1 1/2 cups nut milk

1/4 tsp ground cardamom


Mix well in a small bowl, cover and let soak overnight in the fridge.

In the morning add:


1 apple, coarsely grated

1 cup natural yogurt


Top with:


Blueberries

Almonds

Hemp hearths

Honey comb or maple syrup
