Granola your way

Granola

This recipe gives you a toasty delicious option for breakfast or mid afternoon snack, its sweetness comes entirely from pure maple syrup and honey and the addition of coconut oil gives it the crispiness we love. Combine with thick yogurt and stewed prunes (don't make a face, they are delicious!) will give you the energy needed to start your day, it is quick to assemble and to bake and it's taste will amaze you enough to never by commercial brands again.

Substitute nuts of your liking, change oats for rolled spelt or other grains, add raisins, dry blueberries etc... make it your own!



4 CUPS

2 cups rolled oats

1 cup mixed nuts (pistachios, pecan nuts, walnuts), chopped

1/4 cup peanuts chopped

1/4 cup mixed sunflower seeds and pumpkin seeds

1/4 cup shaved coconut

1/4 cup dried cherries or strawberries

2 tbsp pure maple syrup

2 tbsp pure honey

2 tbsp coconut oil

pinch of sea salt

1 tsp vanilla extract


Preheat the oven to 160ºC and line 2 trays with baking paper.

Mix all ingredients in a big bowl, using your hands to make sure everything is coated with a thin layer of both sweets and oil.

Spread the mixture evenly on the trays in a single layer, you want it to be spread out so it toasts evenly. Toast for 10 min, mix carefully with a spatula and put back in the oven for another 10 min, from here you have to check depending on your taste. I like mine crunchy and golden so I put it back one more time for approx 5 min till the coconut (which is the first one to burn) turns golden.

Leave to cool and store in an airtight jar.

Serve with natural yogurt, fresh fruit, put in your smoothies or eat by itself.
